Recipes for Cooking up Holiday Cookies

No bake cookies: Melt eight tablespoons of butter into a large saucepan and mix in one and a half cups of brown sugar, half a cup of cream, and one third of a cup of unsweetened cocoa powder. Let the mixture boil then remove it from the heat. Add half a cup of creamy peanut butter and a tablespoon of vanilla extract. Stir in three cups of old fashioned oats and a cup of dry peanuts. Drop heaps of the mixture onto the wax paper in a pattern and let it cool for about twenty minutes.

White chocolate macadamia cookies: Heat the oven to 350 degrees and mix two and a half cups of flour, one teaspoon of baking soda, and one teaspoon of salt. Mix twelve tablespoons of unsalted butter, three fourths of a cup of granulated sugar, half a cup of brown sugar, and three tablespoons of light corn syrup. Add three eggs, one at a time, and add two teaspoon of vanilla extract. Mix in two cups of white chocolate chips and one cup of salted macadamia nuts. Drop the mixture into baking sheets, a few inches apart, and bake them until they are golden brown.

Toffee-oat chocolate chip cookies: Heat the oven to 375 degrees. Mix two cups of all-purpose flour with one and a half cups of oats, half a teaspoon of baking soda, and half a teaspoon of salt. With an electric mixer, beat one cup of unsalted butter, one cup of light brown sugar, and half a cup of granulated sugar into the mixture. Beat two large eggs into the mixture one at a time and add two teaspoons of pure vanilla extract. Stir in four broken toffee candy bars and one cup of semisweet chocolate chips. Drop tablespoons of the dough onto the baking tray and cook them until they are a golden brown. Let them cool slightly and transfer them into a wire rack.
